If you have leftover mashed potato, you don’t need to make it again but if you intentionally want to make mashed potato candy for your kids, you need to prepare the ingredients to make mashed potato first. They include 5 large russet potatoes (peel and let them in the whole), water, ½ cup of butter, ½ cup of cream or milk, salt, 1/3 cup of sour cream, fresh ground pepper, and 1 egg (or you can use 2 eggs). Next, prepare 1 tsp of vanilla, peanut butter, and 1 box of powdered sugar.

The first thing you need to do to make mashed potato candy is boiling the potatoes in the water until they are fork-tender. After that mashed the potatoes in a large bowl until they turn into chunky small. Add all the ingredients except vanilla, peanut butter and powdered sugar.
Moreover, you can add powdered sugar to the mashed potato. Mix them well before putting them into the fridge for an hour or two. After the dough is chilled in the fridge, take it out. Put the dough on the powdered sugar on the waxed pepper or dusted bread board. Spread the peanut butter on top of it and roll it again like making a jelly roll loaf.

The last, put the mashed potato candy in the fridge for about an hour and slice it into pinwheels. It’s very easy and simple, right? You only need to make it around 15 minutes if you already have leftover mashed potato.
