How to Cook Colcannon

If you love cheese and there are a lot of potatoes in your kitchen, you can make a delicious food from those two ingredients. You can make colcannon for your family. You need to spend 2 hours 30 minutes to cook this delicious food in which 2 hours for preparation and 30 minutes for cooking. Although it takes some time to prepare and cook colcannon, the cheesy and delicious taste won’t make you regret it.
How to Cook Colcannon

Ingredients to Make Colcannon
Beside preparing 1 pound of red potatoes (you also can use 1 pound of gold potatoes) that are unpeeled to make colcannon, you also need to prepare other ingredients to make this food cheesy and tasty. What you should prepare are 1 cup of chopped onion, 1 tbs of butter, salt and pepper based on your preference, 4 cups of shredded green cabbage, ¼ cup of milk, and 3 ounces of cheddar cheese (you also can use 3 ounces of other hard cheese that is grated, if you don’t have cheddar).

Directions to Cook Colcannon
The first step to cook colcannon is washing the potatoes until they all clean. Prepare lightly salted water and boil the potatoes until the flesh turns tender. After the potatoes boil, drain them and reserve the liquid. Set the potatoes and liquid aside to cool. Then, boil the cabbage along with the onion using the reserved potato water for around 5 minutes. After they boil, drain and set them aside.

Next, peel the potatoes when they are already cool. Mash the potatoes with butter, milk, pepper and salt. Taste it and add some salt or pepper based on your taste. When the potatoes are all mashed, add the reserved onion and cabbage mixture. Then, add 2/3 of the cheese with the mashed potato. When they are all mixed, put them in a shallow baking dish. Use the remaining cheese to spread on the top of the dough and heat it on a moderately hot oven.
